So if you are like me, the holiday eating is fun, but you can't wait to get back to eating healthy again! Whenever Jared & I have a period of crappy eating (ie. Christmas!) we follow it up with a detox. I know what you are thinking! Wierd drinks...no food...etc., but this isn't so bad. We do a 7 day detox diet. You get to eat, just VERY healthily!
It consists of veggies, fruits, fish, nuts & legumes, potatoes, oatmeal & tons of water! No caffeine (the hardest part for me!), no processed anything, no salt, no eggs, no dairy, no meat (aside from fish) and no sugar (aside from fruit & honey).
The first two days are the hardest for me, due to the lack of caffeine. I get a terrible headache! After that, it isn't so bad. It just gets your digestive system working, if you know what I mean! And it makes you feel better! If you are interested check out this site: 7 day detox diet

I am a new mom as of August 2010, and I love to cook! I am a healthy eater and try to prepare healthy meals for my family! Every now and then I make an indulgent dish or a treat, but overall, I adapt recipes to make them as healthy as possible!

Hello!
I love to cook, and love to share my recipes & ideas with friends, so I figured maybe a food blog would be fun. As my life has recently become much busier, I may not find time to post that frequently, but I am going to attempt!
Most of my cooking is healthy, however tis the season to eat, so I will start this healthy blog with a recipe that is not so healthy!
Last night I was determined to bake something for the holidays and I chose fudge. Peanut butter chocolate fudge. I managed to make it from scratch with a four month old on my hip, and it is delicious! You can find the recipe courtesy of Bakerella (original link) below, and will try to take a picture of my fudge when I get home tonight! Try it, it's easy!
Peanut Butter Fudge
3 cups sugar
3/4 cup margarine (I like Parkay)
2/3 cup evaporated milk
1 tsp vanilla
6 oz package semi sweet chocolate pieces
7 oz. jar Marshmallow Creme (I like Kraft)
1/2 cup peanut butter (I like Jif)
1. Combine 1 1/2 cups sugar, 6 tablespoons margarine and 1/3 cup evaporated milk in a medium pot.
2. Bring to full rolling boil, stirring constantly.
3. Reduce heat to medium and continue boiling for 4 minutes, stirring constantly to prevent scorching.
4. Remove from heat and stir in chocolate pieces until melted.
5. Add 1 cup (1/2 jar) marshmallow creme and 1/2 teaspoon vanilla. Beat until well blended.
6. Pour into greased 13 X 9 pan.
Repeat with remaining ingredients substituting peanut butter and spread over chocolate.
Then, cool at room temperature and cut into squares.
